01 / THE F&B DESIGN REALITY

The guest sees the space.
The team operates the system.

Before tender or procurement, consider how the layout, equipment, services, materials and approval responsibilities connect. A convincing concept still needs a documented delivery basis.

01

Dining and kitchen plans can tell different stories

Review the supplied layout for kitchen-to-dining interfaces, service access, customer/staff movement and operational assumptions. Identify questions for the operator and kitchen consultant to resolve.

02

Equipment and services information may not align

Compare supplied kitchen equipment schedules with available exhaust, fresh-air, electrical and plumbing information. Flag missing capacities and unclear interfaces for appointed engineers to validate.

03

Approval responsibilities can be unclear

Record the premises, intended use, landlord conditions and questions for the relevant local authority, fire and health routes. Identify responsible parties and documents requiring professional confirmation.

04

Finish choices and budget assumptions need evidence

Review material specifications against stated use, cleaning and maintenance needs. Compare the agreed budget with supplied quotations, allowances and dated comparables where available.

02 / OUR ROLE

Connect the conversations.
Clarify the responsibilities.

We bring the operator’s brief, designer’s information and kitchen/services interfaces into one owner-side review, informed by the founder’s 19+ years of GCC fit-out career experience, including F&B delivery.

This is a focused review and strategy call. Your operator, kitchen consultant, designers and engineers retain their respective decisions, design responsibilities and submissions. Ongoing project leadership is separately appointed.

HOW THE REVIEW WORKS

One outlet decision.
Three connected checks.

01 / OPERATIONS

Start with how the outlet runs

Agree the operating assumptions, equipment baseline and kitchen/dining interfaces. Record where operator or kitchen-consultant decisions are missing.

02 / INFORMATION

Test the design evidence

Compare the available drawings, schedules and specifications. Keep engineering questions, authority dependencies and supplier assumptions visible.

03 / DECISION

Name what must happen next

Recommend proceeding, proceeding with amendments or holding the reviewed commitment pending critical information. Record proposed owners and closure evidence.

Senior judgement, grounded in delivery.

Led by Taj Nadzuni, drawing on 19+ years of GCC fit-out experience. Career experience from previous roles; this is not a claim of PathToVia project commissions.

F&B Design & Operational Readiness Review

Full F&B project management is scoped and quoted separately.

What the RM1,800 fee covers

One outlet, one agreed design package or defined zone, one document baseline and one pre-tender or procurement decision. Includes the written readiness/action register and one 60-minute strategy call.

We confirm eligibility, operating inputs, document volume, disciplines, available cost evidence, review limits and delivery timing before appointment. Multiple outlets, whole-project investigations, specialist calculations, submissions, site visits, revised packages and ongoing coordination need a separate quotation.

Useful inputs include the concept/operating brief, layout, kitchen equipment schedule, available M&E drawings and capacities, material specifications, landlord requirements, budget and available quotations. Missing inputs are discussed before confirming the scope.

READINESS REVIEW & SPECIALIST CONFIRMATION

Identify the questions.
Assign the right confirmations.

Kitchen and dining flow findings use the supplied operating brief, layouts and schedules. This is not a full kitchen design service, food-safety audit or assurance of operational performance. Your operator and appointed specialists confirm the operating design.

M&E review checks available information and interfaces. Exhaust and fresh-air calculations, equipment loads, grease-trap sizing, electrical capacity, plumbing design, testing and certification require the appointed competent professionals. Missing or inconsistent capacities are flagged; they are not calculated or certified in this package.

The authority checklist records questions, documents and proposed responsibilities for the relevant local licensing, fire and health routes, as applicable to the premises. It does not provide statutory submissions, legal advice, approval or a compliance guarantee. Requirements and dates need confirmation with the relevant authority, landlord and appointed professionals.

Material findings use available specifications and performance/maintenance evidence; suitability and required approvals remain with the responsible parties. Budget findings use supplied costs and dated comparison evidence where available. This is not a measured cost plan, comprehensive market-rate survey, final-price guarantee or promise of savings.

OFFICIAL STARTING POINTS

Food-premises registration and local licensing have distinct requirements. The checklist identifies the project-specific questions to confirm; a single generic approval list cannot settle every outlet’s requirements.

Before we begin

  • We confirm eligibility, the exact document list, revision baseline, deliverables and delivery date in writing before you appoint us.
  • The listed fee covers the agreed review and included call or workshop. One consolidated clarification response on the delivered findings is included; revised submissions, further meetings and expanded scope need a separate quotation.
  • Any applicable taxes, travel or third-party report costs are disclosed in the written quotation before acceptance. No additional paid work starts without agreement.
  • Findings identify the evidence reviewed, assumptions, missing information and limitations. They support your decision; they do not guarantee cost, programme, contractor performance or an issue-free project.
